Genius Ryan.....utter genius mate!!

Hi David,
I find that most recipes are only good a la minute, however with high fat content from the pistachio puree, these stay pretty moist for a while. Of course the fresher the better but after microwaving and freezing they were still nice after 6 hours out of the microwave

How long in advance can the sponges be cooked. As of yet, we've always been doing them a la minute. How much shelf life have you gotten out of them?

I really want to try this method of creating a sponge, is there any chance you could send the recipe please?
